1 onion
a little oil
1 tsp jeera seeds
2 tsp whole soomph
4 cinnamon sticks
2 star anise
2 bay leaves
1 tsp turmeric
2 tsp dhania-jeera powder
1 tsp soomph powder
3 tbs masala
2 tbs chilli powder
2 tsp ginger and garlic paste
2 culls (washed and cut)
1 tomato, chopped
curry leaves
gizzards (optional)
steamed potatoes
sprinkle of garam masala
Fry the onion in little oil with the jeera, soomph, cinnamon sticks, star anise and bay leaves.
Add the turmeric, dhania-jeera powder, soomph powder, masala and chilli powder. Braise for about 5 minutes.
Add the culls and the ginger and garlic paste. Mix well with the spices and cook on medium heat for an hour.
