DISCOVERY SA CHA CAESAR
MAKES ¾ CUP / 20 MINUTES
After seasoning this month’s hot pot (page 66) with Chinese sa cha sauce, keep cooking! The mellow, slightly funky blend of oil with dried fish, sugar, garlic, onion, and sesame makes an excellent Caesar dressing, with no mincing required. Just add romaine, shaved parmesan, and croutons. In a bowl, whisk 6 tbsp. each extra-virgin olive oil and finely grated parmesan cheese, ¼ cup stirred sa cha sauce*, 3 tbsp. lemon juice, ¾ tsp. kosher salt, and ½ tsp. pepper.
