‘I have always had problems with varicose veins. They run in my family. Unfortunately, I had my veins “stripped” about 40 years ago when that was the only option. Sadly, as part of the healing process, these veins regrew but without valves, causing more problems. ‘Beautiful flowers were just being binned’ URSULA STONE, 55, from London, has found a way to brighten up people’s lives. ‘Pulling the big flower display apart, I felt so sad. There were beautiful roses, lilies and anemones that were all fully in bloom – and going in the bin. Pesto chicken bites Sun-dried tomato pesto gives these a lovely sunshine flavour, but you could try green basil pesto or Thai or Indian curry pastes instead to make these easy canapés. MAKES 21 PREP 15min COOK about 8min In a food processor, whizz 3 skinless chicken breasts with 5tbsp sun-dried tomato pesto and plenty of seasoning until well combined and fairly smooth. New and old King Charles III’s Coronation – only the seventh in 200 years – will be pared back compared to his mother’s nearly 70 years ago, with the ceremony expected to take just half the amount of time.
