Prawn and courgette fritters with mint and parsley
Who doesn't love a fritter, and these have a creamy, citrussy flavour – plus they're a great way to use up a glut of courgettes.
Prawn and courgette fritters with mint and parsley

150g cottage cheese 2 limes, zested Handful of fresh mint leaves, roughly chopped Handful of flat-leaf parsley leaves, roughly chopped 140g large prawns, cooked, peeled and chopped 4 tbsp plain flour 1 egg, plus 2 egg yolks 2 courgettes, topped, tailed and grated 1-2 tbsp olive oil
