SPICY PORK KEBABS

INGREDIENTS
▶ 800g pork fillet▶ 1 tsp dried chilli flakes▶ 2 tsps smoked paprika▶ 1 tsp salt▶ 2 T olive oil▶ Juice of 1 lemon▶ 2/3 cups white wine▶ 2 T tomato paste▶ 2 tsps red peppercorns▶ 2 bay leaves▶ 2 tsps honey▶ 1 red pepper, seeded, cubed▶ 1 red onion, cut into 8▶ Toasted wraps, for serving▶ ½ cup crème fraiche, for serving▶ Flatleaf parsley, for serving▶ Sliced red onion, for serving
METHOD
1. Cut pork fillet into cubes. In a bowl, mix chilli flakes, paprika, salt, olive oil, juice, wine, tomato paste, peppercorns, bay leaves, and honey to make a marinade. Add pork cubes, toss well to coat, then cover and refrigerate for 1 hour.
