Mediterranean Salmon Sandwich

1∕4 small red onion, very thinly sliced1 tablespoon red wine vinegar3∕4 teaspoon kosher salt, plus more for seasoning2 ounces feta cheese, crumbled2 tablespoons mayonnaise2 tablespoons pomegranate seeds1 tablespoon lemon juice1 tablespoon finely chopped chives, plus more for serving1∕4 teaspoon black pepper, plus more for seasoning2 thick slices fresh country bread or 2 large wraps2 radishes, thinly sliced1 small Persian cucumber, thinly sliced4 ounces smoked salmonLemon wedges, for serving
1. In a small bowl, stir together the onion, vinegar, and ½ teaspoon salt. Let sit, tossing occasionally, until softened, at least 15 minutes and up to a day ahead.
